Anyway, you guys know how I started eating eggs again somewhere in July? Weird right? I know, trust me it still freaks my family and Micah out. I went from being a hardcore vegan and part-time raw vegan to eating eggs. Guess what? I still like them! What better way to showcase eggs than a hardy and easy to make quiche recipe!
Now, this totally has a summer vibe to it because of the zucchini and corn. I get it, zucchini is not in season near me and I’m all for eating what’s in season. But I could not resist this classic combo that I love so dearly. So, what’s in the mix?
