I do and soon you will too. Now, before you cross me off as a crazy grape-ruin-er just hear me out. Sweet and sour? Salty and sweet? See where I’m going with this? There is a grape sugar caramelizing magic that happens in the oven that I just can not explain. The grapes are drowned in balsamic vinegar before they go in but don’t worry, they love it. That vinegar is crucial for mellowing out that fresh sweetness and bringing on that caramelized sweetness I just told you about.
Enough about grapes, let’s talk about what else is in the mix. Roasted slivered almonds, crunchy wild rice, sharp green onions, and peppery arugula or tender spinach. The leafy greens are optional because I ate half of this by itself without lettuce and it was just as tasty.
