This is not a “traditional” lasagna recipe and my family is not Italian, by any means. Please do not send your “Nona” after me to try and teach me the “proper way.” I will simply tell her, “Vafanopoli,” like Joey, and send her packing back to Italy. This is MY recipe for Vegan Vegetable Lasagna.
This recipe is vegan delicious, which means no animal or animal products, or no beef and cheese (insert gasps here). This is an amazing recipe to make for the family because it is warm, hearty, healthy, and will last you through the week. Vegans and carnivores will both love this recipe, equally. And I promise, no one will miss the beef and cheese. I served a giant square of this lasagna with homemade pesto breadsticks to collect all the deliciousness left behind on the plate.

For Pesto Bread: I used a Trader Joes regular pizza dough and kneaded with Trader Joes herb pizza dough. Flattened out on pan and topped with olive oil and homemade pesto. Baked until brown. You may substitute homemade pesto for store bought, but homemade is obviously better
