Tuesday started my official “stay-cation” from work. I still have school, but let me tell you how amazing it is to not have to do both!
Today, my alarm went off around 7:15 am and I wandered out to my kitchen to make breakfast. My roommate apparently decided to sleep on the couch:
I really wanted My Favorite Green Smoothie for breakfast but I ran out of Sunwarrior about a week ago. I have been waiting patiently for an order I placed two days ago through iHerb.com. I opted for Coconut Oats. While eating breakfast I studied for a test that I took later around 12 pm. It was for my class related to therapeutic diets in a clinical setting. The material and class I understand, but the exams are always from left field.
I left school frustrated and headed home. On the way home I stopped and purchased curtains for my living room. I have held off purchasing home decor for my condo because I did not think I was going to be staying in Arizona for this long. Now that I know I have about two years left, it is time to make my home as cozy as I wish!
Worst windows for curtains! I decided to roll with a massive double bar to go across the top and loved the chocolate brown color in silk.
I will be sure to post a picture once I have put them up. The genius that I am purchased curtains and curtain rods without owning a power drill first. Thankfully, my besty is coming over tonight to put them up for me…well, I am “helping.” 😛
After my new purchase I decided to stop by Trader Joes for a few items. I had Tina’s Paleo Pad Thai on the mind for lunch, just the veggie version. I can not go into Trader Joes or Whole Foods without purchasing items I do NOT need:
DELICIOUS! Pick this up next time you are at TJ’s and add in coconut milk. SO good.
Persimmons and a toothbrush made out of recycled yogurt cups! C’mon, YOGURT CUPS! I had to.
One of the items I needed to pick up was sunflower seed butter and one of the associates at TJ’s it was recalled with their peanut butter!!! The horror! I scraped the last of my jar to make this, when I got home.
I picked up a spaghetti squash to use for the Paleo Pad Thai and was SO hungry by the time I got home that I did not want to wait for the squash to finish roasting. I opted for the easy and less reliable way and steamed it in the microwave. As I was blending the sunshine sauce in my Vitamix I heard a loud BAM! and the microwave door flew open!
Hey, I look at it this way. It was already separated from the skin for me! Haha.
