This recipe for The Best Vegan Sugar Cookies is easy to make, perfect for Valentine’s Day, extremely soft, with a slightly sweet frosting.
Claiming something is “the best” can call for major eye rolling. Trust me, I’ve done it plenty of times to other’s claims that their recipe is “the best.” However, let’s just be fair and honest and accept that these are in fact the best vegan sugar cookies. While we’re being honest I should tell you that I hate sugar cookies. There I said it. I have never, ever been a fan of those cloyingly sweet bricks of butter and sugar. Iced sugar cookies or frosted sugar cookies were just never my thing. My teeth always hurts thinking about them.
What makes them the best is the moisture in the cookies which can be attributed to the tangy yogurt. It adds enough moisture without making the cookies gummy which can be a common mistake in vegan baking. The added cornstarch helps stabilize the structure of the cookies and creates an extremely tender crumb. Tender crumb = soft cookie, plain and simple.
When I set out to make the best vegan sugar cookies I took many things into consideration. They needed to be easy to make, flavorful, airy like cake but chewy like a cookie, and the cookies needed to be crave worthy. I truly believe I’ve accomplished all of those things in this batch of cookies.
The frosting is optional but it does lend a slight sweetness to the cookie that is jam packed with vanilla flavor. The frosting coats each crumb as you chew making these soft and buttery sugar cookies a perfect balance of flavors and textures.
The sprinkles on top are there just for decoration. Feel free to use any sprinkles you have on hand or even color the frosting a different color, say pink or red for Valentine’s Day!

Feel free to just measure out 3 tablespoons, roll together in your hands, and place on the cookie sheet and slightly flatten out to bake.
I hope you enjoy these cookies as much as Micah and I did! Store in an airtight container or plastic bag for up to a week. After three days of not being able to say no to these sugar cookies we threw them away to stop ourselves.
