With Superbowl right around the corner these soft pretzel bites with healthy cheese dip make the perfect snack option that is lower in calories, dairy free, and extremely addicting.
Let’s flashback to Superbowl 2008 in Phoenix, AZ. I was a different person then. Much more into the whole party and club scene of Old Town Scottsdale. For those of you who are not familiar with Old Town it can be summed up as the Vegas of Scottsdale. Within a one mile radius there is well over 20 clubs and bars within walking distance. What this means for a young 19 year old Christina is an insane amount of fun.
Those days are long gone now. I’m a grandma compared to my “younger days” and barely drink one glass of wine a month. Get all dolled up to go out, dance all night long, meet new people, take shot after shot, and not have a hangover the next day? Not in my future any time soon. Unless I go to Vegas which is long overdue (I’m talking to you Jen and Annise)!
What I’m trying to say is that I wish I was in Scottsdale for just the weekend to relive that level of insanity. To all my Scottsdale friends I hope you have a safe and insanely wild and crazy weekend! On Sunday when you’re recovering or maybe just continuing the shenanigans at someones house you’ll want something tasty to snack on. Enter in these soft pretzel bites with a healthy cheese dip. (best transition ever)
Not just any healthy cheese dip but THIS healthy cheese dip that is not even a dip at all but SOUP. Your mind is blown, I know. That’s right. I made these pretzel bites back in early November along with this recipe for Cheesy Cauliflower Soup. By the way if you have not made that soup by now you are crazy. I’m using every ounce of will power right now to not make that soup with the pretzel bites. The plus is that the base of this cheese dip (soup) is cauliflower which eliminates the flour-based, heavy cream/milk variety of cheese sauce that is typically served with pretzels. Winner winner.
Back to the pretzels. Guys, don’t let yeast dough freak you out let alone making pretzels. It is easy peasy and you will laugh when you realize the only thing that makes a pretzel a pretzel is the baking soda bath it takes before going into the oven. Seriously. I know you probably thought that pretzel dough was this majestic creation but it’s not. Really, really, easy.
Personally I don’t care for crunchy pretzels. I don’t even care for a soft pretzel with a crisp exterior. Give me a super soft, doughy, chewy pretzel with no salt and the perfect dip. That’s a majestic pretzel in my opinion.
Take an hour out of your day (the rising time doesn’t count) to whip up these soft pretzel bites with healthy cheese dip and serve them on Superbowl Sunday.
