Soft and Chewy Ginger Molasses Cookies are the perfect Christmas cookie to gift to friends and family!
Is anyone else a quasitarian but mostly vegan and lives with a meat eating boyfriend? Anyone? I need to start documenting what happens in this household and the conversations we have.
So since I’ve been a stay at home fur mom slash bloggidy bloggin’ all day long, I have plenty of time to make dinner every night before Micah gets home from work. Totally love it…minus the whole disappearing savings account fiasco but that’s not the point. So Micah calls and I tell him I’m cooking this glorious quiche for dinner and he tells me how he’s starving and SO hungry and borderline going to DIE if he doesn’t eat something. Insert dramatic eye roll here.
Anyway, he tells me he’ll pick up a snack and I immediately freak because his snack means drive-thru cheeseburger, maybe french fries, oh possibly cheese curds (d@mn you Wisconsin!). He does this where he’ll arrive home and suspiciously be “not hungry” but “didn’t eat anything.” Right. So he gets home and I start bugging him about what he ate because I just KNOW he picked up some junky a$$ food before he got home.
Now, understand I am not that naggy girlfriend I am just on a quest to help Micah make better food choices, especially when there is a tasty home cooked meal waiting for him when he gets home. He plays this whole “I didn’t get anything I swear” and I roll my eyes and tell him he’s full of sh!t.
We eat said quiche and it was agreeably delicious. Fast forward to last night and we’re about to go to sleep and I tell him, “babe you realize you’re pretty much a vegetarian now.” I’m feeling pretty accomplished at this point and confidently tell him that. He reminds me of the 543 meatballs that I made him earlier in the week (oh, duh) and I tell him that was really the first meat item I had made him in awhile but that he eats vegetarian most of the time.
He starts chaotically laughing (anyone who knows him will hear his laugh in your head as you read this) and says, “I definitely had a hot dog and bratwurst before I came home that one night. Ya know that one night that you kept telling me you knew I was lying about getting something before coming home? Insert blank stare. He’s still laughing. Son.of.a.B. I knew it. My quest continues with no prevail.
What does this have to do with soft and chewy ginger molasses cookies? Uhhh…..Ummm…Ehhhh….Okay, I’m really trying to tie this together but let’s just leave it at you need to make this, like, yesterday!
I could totally claim these as “the BEST” like a lot of food bloggers abuse on a daily basis with every recipe they post. (insert another dramatic eye roll) Do I sound bitter? I’m really not, just being real. 😉 In all reality, these are one of my favorite cookies I’ve ever made and they turned out EXACTLY how I wanted them to.

- festive christmas spices
- soft and chewy
- slight crunch on the outside
Micah asked me why in the world I needed another cookie scoop when I already had one and my response was, “would you rather have a bite sized cookie or the cookie the size of your hand? Most people want the size of your hand cookies.” He tasted one and from that point there was no need to explain. I rest my case. I may not win the drive-thru battle but I win the cookie-the-size-of-your-hand battle. Small wins, my friends, small wins!
