This Smoky Roasted Corn Chowder is sweet, smoky, roasted, low in calories, and every bit delicious!
I am so excited to post this today because this marks my first post for Recipe Redux! Recipe Redux is the first and only recipe challenge website founded by Dietitians with a philosophy that all healthy food should be equally delicious as it is nutritious. I was immediately drawn to becoming a part of this group because as a fellow nutrition nerd myself I am always looking for like-minded individuals everywhere I go, even in the blog world. Each month there is a different challenge and this month the challenge was to create a recipe inspired by smoky and/or spicy flavors like chipotle, smoked paprika, and harissa.
Let’s flash back to the early days of The Beautiful Balance in 2012 where I was taking photos at night in a poorly lit house with my iPhone. I posted this original recipe for Roasted Corn Chowder and it is one of my favorite recipes till this day. It was not until this challenge that I considered tweaking the recipe to emphasize the roasted corn and red bell peppers that are inside the soup. Considering smoked paprika is hands-down one of my all-time favorite ingredients ever I knew exactly have I was going to “redux” my recipe.
When you think of corn chowder what pops into your mind is most likely a thick and super creamy soup with chunks of vegetables and probably bacon. Not here friends. What pops into my mind is a rich, thick, and creamy coconut milk based soup with roasted sweet corn, fresh roasted red bell pepper. When calculating the nutrition stats I realized the soup by itself is a little low in protein per serving. Easy fix and that is where the smoked paprika chickpeas come into play. My original corn chowder recipe was garnished with crushed tortilla chips but that is a less than stellar option when you are limiting your processed foods or sodium intake. These crispy and smoky chickpeas are the perfect addition to this creamy chowder and add just the right amount of texture. To make this soup even better, as if it wasn’t possible, I’ve added buttery avocado to the top as well.
