It’s no secret that I love soup considering there are over 10 recipes for different soups on this site alone. I make at least one soup every single week, sometimes it’s a repeat of one of my favorites and other times it’s a brand new recipe like this lentil soup. I always say I can live off of soup and be completely happy because the combinations are endless.
This golden-hued soup is thick, creamy, and loaded with protein. The flavors are bold but one does not overpower the other. There are so many different styles and types of curry out there in the world so use which one best suits your tastebuds. Personally, I love Middle Eastern curry and most importantly Jamaican curry. This is the curry powder I used in this recipe.
It is mellow but packs the most unique curry flavor you will taste.
Garnished with smoked paprika and fresh parsley and served with a side of homemade greek style pita bread makes this soup a perfect meal.
