This isn’t your grandma’s classic chocolate chip cookie recipe. This recipe for my favorite vegan chocolate chip cookies is my go to for cooking making, gift giving, and the perfect way to satisfy my sweet tooth.
Considering I have made about 1.2 million batches of these chocolate chip cookies over the years I think it’s safe to say this recipe is foolproof. So, how did it all begin? Wayyyyy back before I even considered a plant-based diet and was still eating all things meat and dairy. I was in high school and decided to make chocolate chip cookies and we ran out of granulated sugar. I only had enough brown sugar for what I had written down so I reached for a sugary packet of instant pudding mix and the results were more than what I had expected! I’m not really sure why we even had pudding mix on hand considering no one in my family eats instant pudding. Either way I’m thrilled we had it because these cookies were created.
Fast forward to 2012 when these cookies made their debut on the blog, only vegan and with REALLY poorly lit and styled photos. I was burnt out from “8 Days of Cookies” and didn’t have any desire to take fancy schmancy photos. That was back when I was still taking photos with my iPhone. Surprisingly, some of the most popular recipes on this blog were taken with my iPhone. Anyway, BIG mistake, because these photos deserve nicely lit and styled photos.
These chocolate chip cookies are everything you could hope for in a cookie. Crispy, chewy, soft, moist, salty, sweet, fudgy, all of the above. A few weeks ago Micah asked me to make a batch of cookies and I made these. Less than a week later they were gone. Did I mention this batch makes over 3 dozen one tablespoon cookies? Seriously. Now I know this is nothing ground breaking. I mean, chocolate chip cookies, how original right? Sometimes, basic and traditional recipes deserve a little attention and these cookies are worthy of an entire post dedicated to them. Back then, pudding in cookies was unheard of but these days “pudding cookies” are a household name. Winner Winner.
