This is my favorite tomato basil soup that makes a large batch to last throughout the week when you need a quick, easy, and healthy meal!
If you’re like me and it is getting close to the start of the school season you are most likely trying to get yourself as organized as possible. That organization means planning out meals so when you’re stressed from work and school you don’t have to stress about throwing a meal together. Batch cooking is always a part of my routine when I’m getting back into the swing of things and what better thing to batch cook than soup!
If you visited my house at any given time you would always find a large container of homemade soup in the refrigerator. This quick and easy dinner allows for more time to catch up on the day with Micah and spend time with him and our fur child. Less time focusing on cooking and more time spent with each other.
This tomato basil soup is so warm and inviting and bound to ease any stressed soul out there. This recipe is also incredibly easy to throw together in no time so you won’t have to worry about taking precious time to cook. Simple ingredients, fresh flavors, and very filling.
To make this a full meal I recommend adding a grain like quinoa or farro and/or roasted chickpeas flavored with a few herbs and spices. A satisfying meal in a bowl…there’s absolutely nothing not to love.
This soup is low in calories, big in flavor, and with a few hearty add-ins becomes a full meal in seconds. Get back into your routine this season by planning out your meals and aiming to batch cook your food in advance.
