My Favorite Pumpkin Pie is a balance of a buttery, flaky crust, filled with a velvety spiced pumpkin filling that melts in your mouth and keeps you going back for more. Perfect for the holidays and with Thanksgiving right around the corner, this crowd pleaser will easily become your favorite as well!
Pumpkin Pie and I have a history. Kind of like this blog. A love-hate relationship that sways between the balance of delicious and tiresome. Sure, there are sweet and savory components that I love about each. Blogging allows me to tap into an inner creative ocean and explore my abilities to create recipes and photograph them but it is also time consuming and frustrating at certain moments.
Growing up I had a true distaste for pumpkin pie. A family member would always bring it to family get-togethers and everyone would swoon over the creamy filling, but I always found pumpkin pie to be lackluster and too-traditional. Like pumpkin pie, blogging felt the same at times. I would swoon over the creative recipes that were swirling around in my mind and coming to life in the kitchen but it would come down to taking photos, editing, posting, promoting on social media, etc, etc, etc….and it would feel dull.
Like pumpkin pie, I took an unexpected hiatus from blogging that was much needed. I thought about this little creative space of mine everyday. Like pumpkin pie I had a million and one ideas in my mind for content and redesign/rebranding and felt overwhelmed to take the next step.
But like pumpkin pie, I have revisited blogging again, rekindled my love for this creative space, and decided to give it another shot. Unlike this blog, this pumpkin pie is made with FRESH pumpkin to highlight the non-tinned, true burnt-yellow, mellow flavor of the orange vegetable. To learn how to roast a pumpkin head over this way.
The crust is simple and can be thrown together by hand or in a food processor. Once par baked, it is filled with a rich, thick, creamy, spiced-pumpkin filling and baked until set. The center slightly jiggles when shook and once cooled it sets up into a velvety filling that melts in your mouth.
Like my favorite pumpkin pie, I love this blog and the ability to pour into it exactly what I want. To develop flavors, friendships, community, and a creative outlet. So like pumpkin pie, my love for blogging is rekindled and here to stay.
