Remember when I made Homemade Greek Style Pita Bread? Well, it was for these tasty falafel patties. Wrapped up in a fluffy pita and layered with mixed greens, tomatoes, red onions, pickles, and slathered in smoky baba ghanoush sauce. Speaking of that smoky baba ghanoush sauce, I need to make it again and it deserves an entire post dedicated to it. Creamy, smoky, and earthy is the perfect addition to this crisp falafel.
Taking into consideration your love for these zucchini and corn veggie burgers and these smoky red pepper veggie burgers, I know you will adore this recipe just as much. They’re quite easy to make thanks to the work horse that is a food processor, but you can easily do the chopping by hand if you like. The key is to not puree the beans and onions and to leave it slightly grainy.
This recipe makes about 16 veggie burgers portioned at 1/4 cup each. Use your favorite 1/4 measuring cup, pack the mixture into it, level it of, and with a few taps you have an evenly portioned and shaped veggie burger. Super easy and you’re on your way to falafel burger heaven! Did I mention the nutritional stats on these? A little over 100 calories per burger, 7 grams of protein in each one and 17 grams of carbs.
