School, work, homework, study, sleep, repeat…
That is my current schedule. For those of you that have been reading (if you’re still out there) this schedule is nothing new. For those of you who are just joining TBB, I am currently a full time dietetic student and I also work full time. What that means is that my life is super lame. Seriously, I’m not joking with that schedule up there, that is real life.
I have so many posts in my mind but every time I think to write one I can’t, because my brain melts and it’s time to go to bed. The only reason that I am writing this post is because I got out of school early and because there is something about not posting for a week that makes me feel like all of you have forgotten about me and I have fallen off the blogosphere. Now I’m just being dramatic. There is no easy way to transition from not posting for a week to a delicious recipe post so I am just going to go ahead and do it.
I made a massive batch of these Glazed Spiced Carrots about a week ago and can not wait for the next batch. Carrots are sliced in a schmancy way that allows for maximum glaze and spice to carrot ratio. Baked at 350, low and slow, these carrots are given the opportunity to crystalize their own sugars as well as soak up all the other flavors they are mixed with. These flavors range from maple syrup to ginger. I will tell you that what sets these carrots apart from any other ordinary glazed carrot is a secret spice, Cardamom. Mmm…I have been putting Cardamom is just about anything I can think of. Cardamom is a magical spice whose warmth and sweet aroma pair nicely with just about anything. Put it in oatmeal, coffee, veggies, quinoa, etc.
Now, demolish the entire batch!
Make these asap, they are the perfect side dish to any meal!
