It is 95 degrees out, cloudy, with intense rains. This weather, even though insanely hot, makes me want to put sweats on, pop in a movie, and curl up in a ball on the couch with a warm soup. I like to pretend I am in 40 degree weather where such attire is appropriate.
That warm soup just so happened to be my favorite Curry-Coconut Chickpea Soup. This soup is a perfect balance of creamy coconut and spicy curry. Let’s just say it is my twist on a classic chicken noodle soup, sans chicken. Sick? This soup can cure you. Raining or snowing outside? This soup can warm you up. I serve this soup with plain, pearled barley. I boil 2.5 cups water and add 1 cup of barley and cook until soft, and finish by fluffing with a fork. It is a simple and inexpensive way to “beef up” any soup.
