You guys, I have a secret to share…

…I am obsessed with forbidden rice.  Not just any forbidden rice, but forbidden rice by Lotus Foods.  I am so obsessed that I purchased 6 bags from Amazon.  You can think I’m crazy, and I might be, but it was a little over $20 for 6 bags and free 2-day shipping with my Amazon prime account.  Best-deal-ever.

 What’s so great about this rice?
According to Lotus Foods,
“Legend has it this ancient grain, referred to as ‘longevity rice,’ was reserved for the emperors of China.  Treasured for its delicious roasted nutty taste, soft texture, and beautiful deep purple color, Forbidden Rice is a neutral source of antioxidants called anthocyanins – purple pigments also found in blueberries and acai – but without the sugar.”
This forbidden rice has the best texture, offering more of  a structured bite than brown rice which, in my opinion, turns to push and loses its texture and flavor rapidly.  Not this rice.  I make a full bag (a little over 2 cups dried rice) at one time and I swear it is gone by the end of the week.  So, so, tasty.  If you follow me on Instagram you will notice that I posted a photo of this salad yesterday before having it for lunch.  Lotus Foods tweeted me and asked me if I had tried the forbidden rice ramen noodles.  Excuse me?  Forbidden rice in noodle form?!  Sign me up!  So upset that they are currently sold out.  I am going to be dreaming of forbidden rice ramen until I have it.

Now, onto the salad.  Seriously, you guys, add anything you want to this salad.  Any veggies you have on hand, feel free to throw them in the mix.  I roasted up sweet potato cubes in coconut oil and black pepper, made a huge batch of my favorite smoked paprika roasted chickpeas, boiled edamame, and steamed haircot verts.

As if this combo could not be delicious enough by itself, I topped this salad with a creamy, thick, curry powder, dressing.

Veganaise, coconut milk, curry powder, pink sea salt, dash of agave…holy heaven in your mouth!  Try not to drink this dressing, please.

Ingredients

    For Salad
  • Forbidden rice (prepared according to package)
  • Edamame (boiled until tender)
  • Haircot verts (steamed until slightly tender but still crunchy)
  • Smoked paprika chickpeas (recipe on blog)
  • Sweet potatoes (roasted with coconut oil and black pepper)
  • Dressing
  • 2 tbls coconut milk (thick white portion)
  • 2 tbls veganaise
  • 1 tbls blue mountain curry powder
  • pink sea salt and pepper

Instructions

  1. Assemble ingredients of salad
  2. Dress salad and serve immediately, cold or hot

  2. Wow this looks SO amazing and fresh!!! I have to look into this rice. I am the way you are but with Mung Bean “pasta”…I order it in bulk because I am obsessed with it. Have you tried it before? YUM!
