Is there anything more Summer than corn? Okay, maybe watermelon…and cherries…and peaches… Honestly, I can’t get enough of fresh summer fruits while they are in season. That is the reason why I have yet to post a fruit recipe here on TBB. I can’t help but eat the fresh fruit before it makes its way into bars, cookies, or cobbler. Which is why you will not be surprised that my next recipe does not include fruit.
This pizza is SUPER fast due to store bought pizza dough from Trader Joe’s. Seriously, can Trader Joe’s get any more amazing? Stupid question.
This Roasted Corn Pizza is topped with roasted corn, shallots, plenty of basil, fresh roma tomatoes, and any cheese of your choice. The crust is impossible to mess up because, well, you bought it—duh! Secondly, the combination of the smokey flavor from the roasted corn and the earthiness from the basil is such a dynamite summertime combination. You should even try grilling this pizza! I didn’t, mostly because it is 115 degrees outside, but it would be tasty!
- ¼ c EVOO
- 4 garlic cloves, crushed
- 1 tsp sea salt
- ¼ tsp black pepper
- 1 package Trader Joe’s herb pizza crust
- ¾ c roasted corn
- 1 roma tomato, sliced
- 1 large shallot, thinly sliced
- 1 c fresh basil, chopped
- cheese of choice (daiya slices)
- Pre-heat oven to 400 and grease a cookie sheet
- Roll out pizza dough to desired shape and transfer to greased cookie sheet
- Spread seasoned oil over dough, just enough to cover surface
- Add toppings onto pizza
- Bake for 18-20 minutes until golden brown and fluffy
Roll out the pizza dough into whatever shape you like. I went with rectangle for the first pizza and circle for the second. Transfer the rolled dough onto a greased baking sheet.
Combine EVOO, garlic cloves, sea salt, and pepper in bowl and coat pizza dough evenly.
Top with roasted corn
Top with cheese of choice
Sprinkle shallots on top
Add fresh roma tomato slices
Top with more cheese of choice, followed by fresh basil (add more after the pizza is done)
