Vacation in 2013…so far

Well, hello there! I hope everyone is enjoying their hump day, so far. I can’t complain, I am currently enjoying an hour break. That hour break that I described last week as the one I look forward to. An hour to myself, to do and think whatever I want, and enjoy a delicious salad, accompanied by white noise. By the way, the white noise Pandora station has changed my life. I listen to it almost every single day and cannot describe the release it gives me. Yoga of the mind, I tell you. Try it, I promise it will not disappoint.

Currently… spinach // coconut shreds // strawberries // avocado // dijon dressing // falafel

Not much has changed since the last time I posted. I am still studying almost every hour of my day away:

That deliciousness on the side is my Roasted Corn Chowder topped with farro and avocado…make this NOW!

Also, I am just going to post this beauty for conversation purposes…let’s just say that my cousin and I both could not figure out how to assemble a gas can…ridiculous laughter ensued.

Now, onto the bigger picture…
Man oh man am I excited for 2013! I have so much to look forward to within the next couple of months and it is all due to my glorious vacation planning.

March

-LA to see Swedish House Mafia’s “Last Tour”
-New York to visit my sister for her big 3-0 ;)

April

-Coachella! Amazing music, camping in the desert, tons of amazing people to camp with

May

-Chicago with the bf and to participate in the madness that is the crosstown classic (White Sox vs. Cubs…Sox will kill them) and to visit his parents

August

-Outside Lands in San Francisco…I LOVE that this has become a yearly tradition

September

-I turn 25…about that…I’m fine with getting older but let’s just say that I want to be out of the country with monkeys running around and hot springs bubbling in the distance ;)

Those are my plans, so far. I am sure I will be adding to this list. A vegas trip is long overdue and my birthday plans are not set in stone. I don’t really care about birthdays, it is just an excuse to travel :)

This is a quick and random post because I want to get back to my ME time before I have to return to class. I just wanted to pop in and say, “hello,” and let all of you know that I am alive. I have not posted any recipes in a long time. I blame it on my 24-hour flu bug I had a week or so ago. I plan to change this and my creative wheels are spinning.

I will love to hear what all of you have planned for this year, as far as vacations go, so please let me know in the comments below.

    Sounds like you have a really fun year planned! I never knew Pandora had a white noise station – totally gonna try that out!!

    I’m totally going to have to listen to Pandora’s white noise station. I need a little of that every day after work! As for travels in the coming months, hopefully a trip to Puerto Rico in March or April, the Kentucky Derby and Blend in May, Chicago a few times in the summer :) and a Napa trip this fall. I’m getting super excited just typing this! I’ve never been to SF so if we include that in our Napa trip, I’ll need some suggestions!

      How fun!!! Puerto Rico seems absolutely gorgeous. If you are in Chicago at the end of May let me know! Chicago fans unite! Haha. SF is incredible, there really is no place like it. I have so many suggestions, just let me know if you are going.
