Glazed Lemon Cookies!
6 days…7 days since I posted the 7th day of my cookie-extravaganza. I apologize. With the holiday excitement and just massive amounts of cooking on my end, I haven’t had time to post. Not to mention in the past few days I have contracted some sort of sickness from my co-workers that is causing me to miss work without sick days and I sleep non-stop. I can’t breathe, taste, smell, see, or move, but I managed to snap a few pictures of the finished lemon cookies for the blog. Dedication, my friends, sick and sloppy dedication. They are not the prettiest of photos but they have a lemon in them. See what I did there? I made the picture fancy for you. It is supposed to entice you into the lemony goodness of these cookies to the point where you rush into the kitchen and make them. In my sick delusion I don’t expect you to do that. However, if you happen to do so, you will not be disappointed. At first I did not glaze these cookies. After tasting them they did not have the lemon punch I was hoping for. Lemon glaze to the rescue! The perfect balance for this sweet lemon cookie is a tart glaze. Delicious.
Well, I am off to bed. I plan on posting pictures from Christmas and the past week. Judging from just the blog, it seems as though all I do is bake cookies. There’s more to me, I promise
- 2.25 c WW flour
- 1 tsp baking soda
- ¼ tsp salt
- 1 c butter, softened (I use Earth Balance)
- ¾ c brown sugar (packed)
- ¼ c cane sugar
- ½ c applesauce
- 1 tsp lemon extract
- 2 tbls lemon zest
- 1 c powdered sugar
- 1 tsp lemon zest
- lemon juice
- Pre-heat oven to 350 and line baking sheet with parchment paper
- Cream butter and sugars together until light and fluffy
- Add lemon extract, zest, and applesauce, and blend
- Sift dry ingredients
- Add dry ingredients into wet ingredients in two batches being careful not to overmix
- Using 1 tbls scoop, scoop cookies onto parchment paper
- Bake for 9 minutes and allow to cool on cooling rack before glazing
- Mix ingredients together, adding just enough lemon juice to bring together to pourable consistency
Cream butter and sugar together. Add applesauce, lemon zest, and lemon extract:
Sift dry ingredients and add to wet ingredients in two batches:
Scoop into lovely dough balls:
Bake 350 for 9 minutes:
Allow to cool completely before glazing:

It’s funny ‘cuz I used to HATE lemon flavored anything and now I can’t get enough! These look amazing! Keep baking more cookies…I love it haha
When I was younger I also hated lemon flavored anything. I LOVE lemon anything these days. As for baking more cookies…after 8 recipes and hundreds and hundreds of cookies, I am taking a break! HAHA.
