On the third day of cookie-thon Christina gave to me… The World’s Most Amazing Chocolate Chip Cookies, Maple Pecan Cookies, and Double Butterscotch Cookies!
My second roommate is here!! My cousin Vanessa arrived earlier tonight and it is so bizarre how it feels like she never left Arizona. I could not be more excited for the shenanigans to come!
Moving right along with the third day of the cookie-extravaganza… D-O-U-B-L-E butterscotch cookies. Butterscotch dough with butterscotch chips. Do I need to say anything else? Make these immediately, your family will love you for the holidays!
Double Butterscotch Cookies [3/8 Days of Cookies]

D-O-U-B-L-E butterscotch cookies. Butterscotch dough with butterscotch chips. Do I need to say anything else? Make these immediately, your family will love you for the holidays!
Ingredients
- 2.25 c WW flour
- 1 tsp baking soda
- ¼ tsp salt
- 1 c butter, softened (I use Earth Balance)
- ¾ c brown sugar (packed)
- ¼ c cane sugar
- 3.4 oz package butterscotch vegan pudding mix
- ½ c applesauce (equals 2 eggs)
- 1 tsp vanilla
- 1 package butterscotch chips (I use a vegan brand)
Instructions
- Pre-heat oven to 350
- Cream butter and sugars together until light and fluffy
- Add pudding mix, vanilla, and applesauce and blend
- Sift dry ingredients
- Add dry ingredients to wet in two batches (Do not overmix only mix until most of flour is incorporated)
- Fold in butterscotch chips
- Using 1 tbls scoop, scoop cookies onto parchment paper
- Bake for 9 minutes and allow to cool on cooling rack before serving
