Chazz Reinhold loves meatloaf. I, obviously, do not.
There is just something about this lentil loaf that screams Fall. Possibly the shredded pear and added cherries. Or, it may be the dash of cinnamon and nutmeg that really ties in the flavors of the holidays. Not to mention, it is slathered in a spiced pumpkin bbq sauce.
Either way, I think our veteran wedding crasher Chazz would gladly swap out his beloved meatloaf for this Lentil Loaf.

I have to admit, I was so excited to test out this recipe that I forgot to take half of the photos that I had planned to. Oops. I had gotten the idea almost two years ago when I was talking with a friend about how disgusting meatloaf is. We began brainstorming ways to make it delicious and I, of course, prevailed. This is great as a side dish to your meal but it definitely deserves the main spotlight. Just try to not drink the bbq sauce
- 1.5 c cooked lentils, smashed (I use Trader Joe’s)
- 1 c pine nuts, toasted
- 2 c yellow onion, chopped
- 3 flax eggs (1 tbls flax meal : 1 tbls water set aside to thicken)
- 4 garlic cloves, minced
- ¼ c Pumpkin BBQ Sauce (recipe below) may use more if you like
- ½ c dried cherries (sulfur and sugar free), chopped
- ¾ c celery, chopped
- ¾ c carrot, shredded
- ½ c zucchini, shredded and squeezed of excess water
- ½ c pear, shredded and squeezed of excess water
- ¾ c whole grain bread crumbs (I toasted whole grain bread and pulsed in food processor)
- ½ c WW flour
- 1 tsp cinnamon
- ¼ tsp nutmeg
- salt & pepper to taste
- 1 c favorite BBQ sauce
- ½ c pumpkin puree
- 1 tbls cinnamon
- ¼ tsp nutmeg
- 1 tsp maple syrup
- Pre-heat oven to 350 and grease loaf pan and line with parchment paper
- Toast pine nuts and set aside
- Saute garlic, onion, carrots, and celery
- In large bowl, mix all ingredients except for cherries and pine nuts
- Fold in cherries and pine nuts
- Pack into loaf pan
- Cook for 50 minutes
- Mix all ingredients together
- Pull lentil loaf out of pan after cooled and slice into 2 inch thick slices
- Top with BBQ Sauce and serve warm
