Blender Pine Nut Pesto

Sometimes you just don’t have time to whip up an entire meal that requires 30 minutes to an hour to put together.  Sometimes you are in a rush before school and still want to have something delicious before you go.  And sometimes, more times than not, you have a large bunch of fresh basil that is on its last life.  In my case, it happens to be school.

Blender Pine Nut Pesto to the rescue!

I can not even really call this a recipe considering you will be just throwing ingredients into a blender, pushing a button (or in my case flipping a switch and turning a knob), and pouring said pesto onto whatever you wish.  Either way, this pesto is delicious.

Note: You may sub in any type of nut you wish.  You may also sub out the nuts for freshly grated parmesan instead, if that’s your type of thing.  No basil?  Use arugula, spinach, micro greens, whatever you happen to have on hand.

Blender Pine Nut Pesto

The perfect balance of nuttiness, herb flavor, and garlic tang, all combined into one thick sauce.
Ingredients
  • 1.5 c fresh, packed, basil
  • ½ c pine nuts
  • 5 cloves of garlic (you can add as many as you want. I clearly like mine SUPER garlicky)
  • ½ tsp sea salt
  • pinch black pepper
  • ½ c EVOO
Instructions
  1. Add all ingredients into blender, minus the EVOO
  2. Blend together and stream in EVOO until desired consistency is reached
  3. Serve

 

Drop all ingredients into blender, minus oil.

That’s it!  I hope you enjoy this extremely fast, and easy pesto recipe-ish.

I just devoured spaghetti squash and pesto with sauteed tomatoes, mushrooms, and onions and now I am off to school!
