Peach Cobbler Cookies

Wow, do I feel horrible.  Not because school started this week and I am extremely overwhelmed between there and work, but because it has been a few days since I posted.  My apology comes in the form of deliciously, peachy, soft, cookies.  Peach cobbler cookies, to be exact.  A few co-workers requested a peach treat and this is the first thing that came to mind.  I will be tweaking this recipe later on, but for the most part, they are absolutely delicious.

These cookies are so ridiculously soft and pillowy that they almost resemble pieces of chiffon cake.

Peach Cobbler Cookies

Serves: 52 cookies
 

Perfectly balanced peach flavor in an extremely soft and pillowy cookie.
Ingredients
  • 2.5 c flour
  • 1.5 tsp baking soda
  • ¼ tsp salt
  • 1 c butter, softened (I use Earth Balance)
  • ¾ c brown sugar
  • ¼ c cane sugar
  • ½ c peach preserves
  • 2 c chopped, fresh, peaches
  • 1 c sliced almonds
  • 1 tsp vanilla
  • 2 flax eggs (1 egg = 2 tbls water with 1 tbls flax meal)

Instructions
  1. Pre-heat oven to 350F
  2. Combine flour, baking soda, and salt in small bowl
  3. In large bowl, cream together butter and sugars
  4. Add preserves, vanilla, and flax eggs
  5. Add dry ingredients in two batches
  6. Fold in peaches and almonds
  7. Using ice cream scoop, scoop out cookie dough onto un-greased cookie sheet
  8. Bake 14 minutes
  9. Transfer to cooling rack
